They're Not Just a Garnish; They're a Nutritional Powerhouse
Research has repeatedly shown that these tiny plants are far more nutrient-dense than their mature counterparts. According to researchers with the U.S. Department of Agriculture (USDA), this isn't a minor difference.
"In general, microgreens contained considerably higher levels of vitamins and carotenoids—about five times greater—than their mature plant counterparts."

They Are NOT Sprouts
This is a critical distinction for your health. Sprouts are germinated seeds consumed whole (root and all) and are grown in warm, wet environments ideal for bacteria like Salmonella.
Microgreens are harvested by cutting the stem above the soil. They require light and air circulation to grow, conditions that do not encourage the same kind of pathogen growth. For regulatory purposes, they are considered a "salad green" and are a much safer product.
